WINE MAKING PROCESS
The winemaking process for J. de Villebois Touraine Sauvignon Blanc begins with machine-picked grapes that undergo a 12-hour skin maceration before pressing. Free-run juices are separated prior to pressing. Fermentation occurs in temperature-controlled stainless steel vats at 16-20°C for 7 to 15 days. Following fermentation, the wine is aged on its fine lees in stainless steel tanks for 6 months. It is then blended and bottled in the spring after the harvest. The winery adheres to sustainable winegrowing practices and is certified by the RSE Vignerons Engagés label.
