WINE MAKING PROCESS
Domaine Jacky Marteau's Touraine Sauvignon is produced using 100% Sauvignon Blanc grapes. A portion of the harvest, ranging from one-third to 60% depending on the vintage, undergoes skin contact maceration to enhance body and fruit. This is followed by gentle pneumatic pressing and a cold maceration at 5°C for approximately seven days. Fermentation takes place in stainless steel tanks at a controlled temperature of 17°C for three to four weeks. The wine is then aged on its fine lees in stainless steel to preserve its freshness and aromatic intensity before being bottled.
