ABOUT THIS WINE
Tournée du Sud is a curated brand created in partnership between the UK importer Hallgarten & Novum Wines and leading cooperative growers in the Languedoc, France. The name translates to 'Tour of the South' and features playful cycling motifs on its label, celebrating the spirit of the 'touriste-routiers' who cycle for the love of the journey. Sourced from vineyards situated on a mid-slope plateau overlooking the Étang de Thau, a coastal saltwater lagoon, the vines benefit from a unique microclimate where cooling Mediterranean sea breezes moderate the daytime heat. This terroir, combined with clay-limestone soils, yields grapes with exceptional freshness and a distinctive saline character.

WINE MAKING PROCESS
The winemaking process is designed to preserve the pristine primary fruit and high natural acidity of the Picpoul grape. Grapes are harvested strictly at night or during the cool early dawn hours to prevent oxidation. Upon arrival at the winery, they are destemmed, briefly macerated on their skins, and gently pressed using a pneumatic press. After cold-settling, fermentation takes place at low, controlled temperatures in stainless steel vats using selected yeasts. Malolactic fermentation is strictly blocked to maintain the grape's signature vibrant acidity. The wine is then aged on its fine lees (sur lie) in stainless steel before early spring bottling, ensuring an unoaked, fresh profile.
