WINE MAKING PROCESS
Tradición Amontillado 30 Years is produced using a solera system, a traditional method of fractional aging. The wine begins its journey with biological aging, similar to a Fino Sherry, for approximately ten years, protected by a layer of flor yeast. Once the flor dissipates, the wine transitions to oxidative aging in American oak barrels for an additional two decades. This extended oxidative period is crucial for developing the wine's characteristic complexity, depth, and rancio notes. The average age of the wine in the solera is over 30 years, with some components being significantly older, contributing to its V.O.R.S. (Very Old Rare Sherry) designation.
