WINE MAKING PROCESS
Tradition by Jérôme Arnoux is produced using minimal intervention techniques. Fermentation is carried out using only indigenous yeasts found on the grape skins. Following fermentation, the wine undergoes an extended aging period of 24 months in a mix of steel tanks and old barrels. This process is designed to develop complexity while maintaining the wine's natural character. The wine is bottled without any fining or filtration, and a minimal amount of sulfur is added only after malolactic fermentation. These methods are employed to ensure the wine is a pure expression of its Jura terroir.
