Organically farmed grapes are hand-harvested and subjected to gentle skin contact ranging from overnight to seven days. Spontaneous fermentation occurs with indigenous yeasts, after which the wine ages undisturbed for up to 30 months on fine lees in neutral 3,000-liter Stockinger foudres. Bottled unfined, unfiltered, and with minimal added sulfur.
