WINE MAKING PROCESS
The winemaking process for Trousseau des Corvées begins with hand-harvested grapes, which are 100% destemmed by hand in the vineyard, followed by a light crushing. Fermentation is spontaneous, utilizing indigenous yeasts in open containers, with maceration lasting 10 to 30 days and featuring daily cap plunges. Malolactic fermentation occurs in tanks. The wine then undergoes twelve months of aging in large, old oak barrels (foudres), avoiding any new wood. Finally, it is bottled without clarification or filtration, and without any added sulfur, preserving its natural character and freshness, often with its natural CO2 content.
