WINE MAKING PROCESS
The winemaking process for Trousseau Grevillière begins with 100% destemmed and lightly crushed Trousseau grapes. A five-day pre-fermentation cold soak is employed before spontaneous alcoholic fermentation commences, driven by indigenous yeasts. Following fermentation, the wine undergoes aging for about 12 months, primarily in used barrique barrels. The harvest is conducted manually, with an additional sorting step on a vibrating table in the vineyard to ensure optimal fruit selection.
