ABOUT THIS WINE
Two Eggs Aligoté is a unique, micro-production white wine crafted by Joe Swick in Oregon's Willamette Valley. Sourced from the organically farmed Moeller Vineyard in the Yamhill-Carlton AVA, this wine highlights Aligoté—a grape variety rarely seen in the United States. Joe Swick, a key figure in the Pacific Northwest natural wine movement, focuses on producing raw, expressive wines that challenge regional stereotypes. The name 'Two Eggs' refers to the two 700-liter concrete egg-shaped vessels used to age this specific lot, resulting in an extremely limited production of around 155 cases.

INTERESTING FACTS
Fact 01
The wine's name is literal, as the entire micro-lot was aged in exactly two 700-liter concrete egg-shaped vessels.
Fact 02
Aligoté is exceptionally rare in Oregon, where vineyards are overwhelmingly dominated by Pinot Noir and Chardonnay.
Fact 03
The concrete eggs allow micro-oxygenation to soften the wine's high acidity without imparting any oak flavors.

WINE MAKING PROCESS
The grapes are hand-harvested and immediately direct-pressed upon arrival at the winery with no skin contact. Fermentation occurs spontaneously using only 100% native, wild yeasts. The wine is then aged for 18 months on its fine lees exclusively in two 700-liter concrete egg-shaped tanks. The egg shape encourages passive, continuous convection-like movement of the wine over its lees, enriching the mouthfeel, while the porous concrete allows microscopic oxygen transfer to soften the high natural acidity. The wine is bottled with zero fining, zero filtration, and minimal sulfur dioxide additions.
