WINE MAKING PROCESS
Tx Txakoli by Txomin Etxaniz is produced using traditional methods with a touch of innovation. The grapes are hand-harvested from steep, terraced vineyards. The must undergoes fermentation in stainless steel tanks at very low temperatures, employing indigenous yeasts to preserve natural effervescence. A key step is the aging process, where the wine rests on its lees for about six months in acacia barrels. This 'sur lie' aging in acacia wood contributes to the wine's texture and complexity, distinguishing it within the Txakoli category. The winery's philosophy centers on respecting tradition while embracing techniques that enhance the unique expression of the Getaria terroir.
