WINE MAKING PROCESS
Txakoli Uno is produced using grapes from Bat Gara Bodega's vineyards in Lezama, Alava. The winemaking process emphasizes minimal intervention. Grapes from individual plots are fermented separately in stainless steel tanks, utilizing indigenous yeasts. Following fermentation, the wine is aged on its lees for about six months in stainless steel. Harvest is conducted manually, with grapes collected in 15 kg boxes to maintain quality. The winery employs respectful agriculture and traditional cultivation methods.
