ABOUT THIS WINE

Stéphane Meyer, a winemaker with a deep connection to nature and a background as a wild plant forager, crafts this wine with a philosophy of minimal intervention. Grapes are sourced from the renowned 'La Vigne aux Dames' vineyard in Château-Chalon, known for its unique soil composition. This non-vintage cuvée is a testament to Meyer's dedication to natural viticulture and winemaking, resulting in a wine that stands apart from traditional Jura styles.

WINE MAKING PROCESS
Udumbara's creation begins with meticulous, nature-driven viticulture, employing organic and biodynamic principles with no chemical treatments. Grapes are hand-harvested and then chilled to preserve purity. In the cellar, they are hand-destemmed and pressed, followed by a slow, cool spontaneous fermentation using ambient yeasts that can last for months. The wine then ages for four years in a mix of oak barrels, including a period 'sous voile,' with barrels topped annually. This extended, low-intervention process is designed to capture the essence of the vineyard and the grape.
