WINE MAKING PROCESS
The winemaking process for the Barbaresco Gallina is deeply rooted in Piedmontese tradition. Following a meticulous manual harvest and selection of the Nebbiolo grapes, fermentation takes place in temperature-controlled stainless steel tanks. The wine undergoes a skin-contact maceration period of 15 to 18 days to extract structure and color. It is then aged for 20 months in large, traditional 25-hectoliter Slavonian oak casks, which allow for gentle micro-oxygenation without imparting heavy oak flavors. Finally, the wine rests in the bottle for at least six months before release.
