WINE MAKING PROCESS
The winemaking process at Ultimate Provence is designed to preserve freshness and vibrant fruit character. Grapes are harvested at night to prevent oxidation from the Mediterranean heat. Upon arrival at the gravity-fed winery, they undergo immediate direct pressing under temperature-controlled conditions. The juice undergoes "stabulation on lees" (cold stabilization on the sediment) to extract deeper aromatics. Fermentation takes place in temperature-controlled stainless steel vats at cool temperatures (16°C to 18°C). The wine is then aged reductively on its fine lees in stainless steel for several months to build mid-palate texture before final blending and bottling.
