WINE MAKING PROCESS
The winemaking process for Kaiken Ultra Malbec 2020 begins with a 7-day pre-fermentation maceration in stainless steel at 10°C. Fermentation takes place in concrete vats for 7 days at 26°C, utilizing selected wild yeasts. A post-fermentation maceration of 20 days follows. Malolactic fermentation is spontaneous and occurs in concrete vats. The wine is then aged for 12 months in French oak barrels (1/3 new, 1/3 second-use, 1/3 third-use), followed by 6 months of bottle aging before release.
