WINE MAKING PROCESS
The Umbria Rosato IGT is produced using the saignée method, where the flower must is exclusively extracted. This is followed by cold static decantation. Alcoholic fermentation is carried out in stainless steel vats at controlled temperatures, typically around 13°C for 20 days or below 16°C for 17 days. Following fermentation, the wine undergoes a 3-month aging period on its fine lees in steel barrels. The grapes used are Sagrantino and Sangiovese, with the 2022 vintage harvested in the latter part of August. The winery employs sustainable and organic farming practices.
