WINE MAKING PROCESS
The Unoperuno Barolo DOCG 2013 is produced using a highly selective process. Grapes are meticulously hand-destemmed berry by berry, a labor-intensive method that takes a full week and gives the wine its name. Fermentation is conducted using indigenous yeasts. Following fermentation, the wine undergoes aging in French barriques, with a mix of new and used barrels. The estate also practices sustainable viticulture, using organic cow manure for fertilization and avoiding chemical pesticides unless absolutely necessary.
