WINE MAKING PROCESS
This White Port is crafted from predominantly Moscatel Galego (80%) and other traditional white varieties. Fermentation takes place for about 20 days in an open spout system ('bica aberta') without skin contact. Following fermentation, the wine undergoes a 3-year aging period in stainless steel tanks. The vineyards are situated on terraced schist slopes at varying altitudes and are managed with a strong focus on organic viticulture, with two-thirds of old vines already converted and all new plantings certified organic.
