ABOUT THIS WINE
The Valpolicella Classico Superiore D.O.C. by Azienda Agricola Gnirega di Clementi Pietro & C. s.s. is a red still wine from the Veneto region of Italy, specifically Marano di Valpolicella within the Valpolicella Classica zone. The estate, located in Valgatara, practices traditional winemaking, including manual harvesting. The vineyards are situated at a notable altitude of 350-400 meters on clay and calcareous soils. The wine is aged for at least one year, first in large oak barrels (30 hectoliters) and then in used barriques, and it is not filtered. This approach aims to preserve the wine's inherent character and complexity.

WINE MAKING PROCESS
The production of this Valpolicella Classico Superiore involves several key steps. Grapes are hand-harvested in October. The must undergoes fermentation for about 10 days, with techniques like pumping over twice daily and a mid-fermentation delestage used for extraction. Following fermentation, the wine is aged for a minimum of one year, initially in large 30 hectoliter oak barrels and subsequently in used barriques. The wine is then bottled unfiltered, preserving its natural character.
