ABOUT THIS WINE
Zýmē Valpolicella Classico Superiore 2017 is a dry red wine from the Valpolicella Classico sub-region of Veneto, Italy. Produced by Azienda Agricola Zyme, it is a blend of Corvina, Corvinone, Rondinella, and Oseleta grapes. The winery's name, 'Zýmē', is derived from the Greek word for yeast, reflecting a philosophy centered on natural processes and transformation. The estate's logo, a vine leaf with an inscribed pentagon, symbolizes the five essential elements of winemaking: man, vine, earth, sun, and water. The winery itself is situated on the site of a medieval quarry, underscoring its deep connection to the land. The 2017 vintage is noted for its dark ruby color, rich cherry fruit, and cedar notes, presenting a compact and elegant palate.

WINE MAKING PROCESS
Zýmē Valpolicella Classico Superiore 2017 is produced using the traditional Ripasso method. After an initial fermentation of fresh grapes in September or October, the wine undergoes a second fermentation for about 15 days on the skins of Amarone. Maceration takes place in stainless steel tanks for 7-8 days. The wine is then aged for a minimum of three years in large Slavonian oak barrels, followed by at least two years in large Slavonian oak botti. A final period of 6-9 months of bottle aging, or at least 6 months, completes the process before release.
