WINE MAKING PROCESS
The Zenato Valpolicella Classico Superiore 2021 is produced using traditional winemaking methods. After hand-harvesting in early October, the destemmed grapes undergo a 10-day maceration period in stainless steel vats. Following fermentation, the wine is aged for about 12 months in oak casks, such as tonneaux or large barrels, to develop its character and structure. The blend primarily consists of Corvina Veronese, Rondinella, and Corvinone, with potential contributions from Sangiovese and Oseleta, reflecting the winery's focus on indigenous grape varietals.
