WINE MAKING PROCESS
The production of Giuseppe Quintarelli Valpolicella Classico Superiore 2017 involves a meticulous process. Grapes undergo rigorous selection and are partially dried before fermentation, a technique that influences the wine's concentration. Alcoholic fermentation lasts about seven to eight days after a three to four-day maceration period. Following fermentation, the wine is aged for several years, often five to seven, in large Slavonian oak barrels. The vineyards are managed using traditional Pergola Veronese and Guyot systems, with a focus on deliberately low yields and sustainable viticulture. Harvest typically begins in mid-September.
