ABOUT THIS WINE
The Pasqua Valpolicella Ripasso Superiore 2021 is a red wine from the Valpolicella appellation in Veneto, Italy. It is produced by Pasqua Vigneti e Cantine, a family-owned winery established in 1925. The wine's distinctive character comes from the 'Ripasso' winemaking technique, which involves a second fermentation on the dried grape skins left over from Amarone production. This process enhances the wine's body, complexity, and color. Pasqua Vigneti e Cantine is recognized as the leading private wine producer in Northern Italy, with a legacy built on tradition and innovation.

WINE MAKING PROCESS
The Pasqua Valpolicella Ripasso Superiore 2021 is produced using the traditional 'Ripasso' method. After initial fermentation, the wine undergoes a second fermentation on the dried grape skins (pomace) left over from Amarone production. This process, known as 'repassing,' enriches the wine with increased body, color, and complexity. Following fermentation, the wine is aged for a period, typically 12-14 months, in a combination of barriques and traditional barrels. This aging process helps to soften the tannins and integrate the wine's flavors. The grapes used are traditional Veronese varietals, including Corvina, Corvinone, Rondinella, and Negrara.
