WINE MAKING PROCESS
The Valdimezzo is crafted using the traditional 'ripasso' method. The process begins with a gentle pressing of the grapes followed by skin maceration at low temperatures for 8 to 10 days to produce the base Valpolicella wine. In February, this base wine is re-passed and refermented over the warm pomace of freshly pressed Amarone grapes. This secondary contact extracts deeper color, structured tannins, and complex dried-fruit characteristics. Following complete malolactic fermentation, the wine is matured for 12 to 18 months in a combination of medium and large oak casks, followed by at least 6 months of bottle aging before release.
