WINE MAKING PROCESS
The Vasilissa 2021 undergoes a 36-hour cold soak followed by soft pressing. Fermentation is spontaneous, with 50% of the must fermented in 500L acacia barrels and the remaining 50% in stainless steel tanks. The wine is then aged for five months on its lees, with 50% of the batch continuing its maturation in acacia barrels and the other 50% in stainless steel. Grapes are harvested in September from vineyards situated at an altitude of 400-600 meters.
