WINE MAKING PROCESS
The 'Vater & Sohn' 2023 is produced using natural winemaking methods. Grapes are foot-trodden and pressed shortly after hand-harvesting. Fermentation is spontaneous, utilizing indigenous yeasts. The wine ages partly in stainless steel and partly in large oak barrels, resting on its lees until the following summer. It is bottled unfined, unfiltered, and with no added sulfur. The grapes are sourced from vineyards in Kitzingen, Theilheim, and Volkach, grown on shell limestone soil.
