WINE MAKING PROCESS
The winemaking process for Gomez Cruzado Vendimia Seleccionada begins with a 3-day cold maceration. Alcohol fermentation occurs at low temperatures in conical steel tanks, with daily pump-overs and rack-and-return (delestage) techniques used for extraction. Following fermentation, 5 months of aging are carried out, with only 20% of the wine maturing in new French oak barrels. The remaining portion is aged in concrete tanks with lees. Grapes are sourced from 30-year-old vines and are hand-harvested and sorted.
