ABOUT THIS WINE
Domaine des Anges is a boutique hillside estate situated in Mormoiron, France, on the eastern slopes of a hill beneath a historic chapel dedicated to Notre Dame des Anges. The estate has a unique cross-cultural history: founded in 1973 by Englishman Malcolm Swan, who was the first in the Ventoux appellation to bottle under his own label, it was acquired in 1992 by Irish entrepreneur Gay McGuinness. Today, Gay works alongside fellow Irishman Gabriel and French winemaker Florent Chave. As a tribute to the owners' homeland, the historic coat of arms of Kilkenny, Ireland, is featured on every bottle.

WINE MAKING PROCESS
The grapes are sourced from mid-age estate blocks with vines at least 30 years old, grown on well-drained calcareous clays, loams, and stony silex soils at 400 meters elevation. Grapes are hand-picked at optimal ripeness in late September or early October. After crushing and destemming, fermentation is kept cool at 24°C to preserve fresh primary fruit. Frequent pump-overs (remontage) and post-fermentation maceration slowly extract soft tannins. The wine is aged for 6 months in concrete and stainless steel tanks to maintain freshness, followed by light filtration before bottling.
