WINE MAKING PROCESS
The Vents Contraires 2021 is produced using a natural winemaking approach. The Soreli grapes, organically grown and destemmed, undergo fermentation with native yeasts in concrete tanks. A key technique is the 15-day maceration on skins, with gentle extraction via punching down. Following fermentation, the wine is aged partially in stainless steel and partially in large wooden foudres. Minimal sulfites are added before bottling. The vineyard practices involve organic viticulture with no chemical treatments, and the vines are trained in a Cordon de Royat form.
