WINE MAKING PROCESS
La Staffa Verdicchio dei Castelli di Jesi Classico Superiore 2023 is produced from manually harvested grapes that are pressed immediately. Fermentation takes place with indigenous yeasts at cool temperatures in stainless steel and cement tanks, with the cement tank fermentation lasting for three months. The wine then ages on its fine lees for about six months in cement tanks. Natural cold stabilization is achieved by leaving the tanks outside during winter, followed by a rough filtration.
