WINE MAKING PROCESS
The Vigna Sessina Chianti Classico Gran Selezione 2018 is produced from 100% Sangiovese grapes. Following hand-harvesting in early October, the grapes are fermented in 75-hectoliter concrete tanks at a controlled temperature of 26°C, using indigenous yeasts. The wine then matures for two years in large, 41-hectoliter untoasted French oak barrels, followed by an additional year of aging in bottle. Dievole employs organic farming practices and emphasizes a philosophy of minimal intervention to showcase the purity of the grape and the unique characteristics of the Vigna Sessina vineyard.
