WINE MAKING PROCESS
The winemaking process for Vigne Vecchie Terre Siciliane Calabretta 2015 begins with spontaneous fermentation using native yeasts in steel containers, with a maceration period of 5 days. Following fermentation, the wine is aged for an extended period, typically around 60 months or more, in large, neutral Slavonian oak barrels (botti). Some sources also mention aging in steel tanks. The wine then receives an additional 12 months of bottle aging before release. Vineyard practices include organic farming with minimal treatments, and the harvest is conducted by hand in early October.
