WINE MAKING PROCESS
The winemaking process for Villa de Corullón involves sourcing grapes from 8 different areas within Corullón, cultivated using organic and biodynamic practices. The harvest is manual with strict selection. Fermentation occurs spontaneously in wooden vats over 32 days, with partial destemming. Following fermentation, the wine is aged for 9 to 15 months in French oak barrels and foudres, with a significant portion often being new French oak.
