WINE MAKING PROCESS
The production of Villa Righetti Amarone begins with the careful selection of ripe grape bunches from the Valpolicella Classico hills. These selected bunches undergo the 'appassimento' process, where they are dried in wooden crates for 3-5 months to concentrate sugars and flavors. The dried grapes are then pressed, and the juice is fermented to dryness. Following fermentation, the wine is aged in large Slavonian oak casks for a minimum of two years, with at least one year in oak, as required by Amarone della Valpolicella DOCG regulations.
