WINE MAKING PROCESS
Villa Santera Primitivo di Manduria DOC is produced from 100% Primitivo grapes. The grapes are harvested in early September, sometimes with a brief period of over-ripening on the vine. Maceration and fermentation are conducted at controlled temperatures of 20-22°C for 10-15 days. Following fermentation, the wine is aged for at least six months in barrels and then spends a minimum of three months aging in the bottle before release. The vineyard utilizes cordon spur training, with an average vine age of 40 years, planted at a density of 5,500 vines per hectare, and yields are managed at 6 tonnes per hectare.
