WINE MAKING PROCESS
The production of Vin Santo del Chianti involves a meticulous process starting with the careful harvesting of Trebbiano and Malvasia grapes. These grapes are then dried for about two months in ventilated rooms to concentrate their sugars. The dried grapes are pressed, and the resulting must is placed into small oak barrels (caratelli), which are not filled completely to allow for oxidation. The wine then undergoes a long aging period of approximately five years in these barrels, developing its characteristic complexity and depth.
