WINE MAKING PROCESS
The winemaking process focuses entirely on preserving the youthful, primary fruit character of the Tempranillo grape. Grapes are harvested at optimal phenolic ripeness and fermented in temperature-controlled stainless steel tanks. Maceration of the grape skins with the must is conducted for 10 to 12 days to extract a light-bodied color and soft, approachable tannins. Periodic pump-overs are performed to encourage gentle extraction. Following the completion of malolactic fermentation, the wine is kept entirely unoaked in inert stainless steel tanks before immediate bottling.
