WINE MAKING PROCESS
The Ca' del Bosco Vintage Collection Dosage Zéro 2019 is produced using the traditional method, known locally as 'Metodo Ca' del Bosco'. This involves meticulous grape selection and washing using the estate's patented 'Berry Spa' system. Fermentation occurs in a mix of oak barrels and stainless steel vats. Following primary fermentation, the wine undergoes extended aging on its lees, for up to 48 months, which contributes to its complexity and fine bubbles. The 'Dosage Zéro' designation means no sugar is added after disgorgement, resulting in a dry and pure expression of the wine. The estate is committed to sustainable practices, with all vineyards certified organic by 2019.
