ABOUT THIS WINE
Vinum Bibo is a unique collaboration born in the Jura but rooted in the soils of Beaujolais. Produced by the micro-négoce project O2Y, founded by Olivier Guala, Yves Roy, and Yoshinori Kuroda, this wine represents a bridge between two of France's most exciting low-intervention wine regions. The grapes are sourced from organic vineyards in Saint-Germain-des-Nuelles in southern Beaujolais and transported to Poligny in the Jura for vinification. The name translates from Latin as 'I drink wine,' reflecting the estate's philosophy of creating highly approachable, joyous, and unpretentious wines.

WINE MAKING PROCESS
The 2022 Vinum Bibo is crafted from 100% hand-harvested Gamay grapes. The fruit undergoes a seven-week carbonic maceration in tanks to emphasize pure fruit expression and minimize tannin extraction. Fermentation occurs spontaneously using only indigenous yeasts, with no temperature control or additives. This is a 'zero-zero' natural wine, bottled unfined and unfiltered with no added sulfur dioxide, preserving the raw energy of the fruit and the distinct terroir of the granite, marl, and limestone soils.
