ABOUT THIS WINE
Les Équilibristes Virevoltant is a red wine from the Languedoc region of France, produced by the collective Les Équilibristes. The wine is made entirely from Carignan grapes, a deliberate choice that sets it apart as it intentionally deviates from the AOC Corbières Boutenac regulations, which permit a maximum of 80% Carignan. This approach highlights the collective's philosophy of winemaking freedom and showcasing indigenous grape varieties. Les Équilibristes is a collective founded by François de Monval and Florent Girou, who collaborate with winegrowers practicing organic viticulture and minimal intervention. The vineyards are certified organic and have been for three decades, with vines averaging 15 years of age grown on clay, limestone, and pebble soils.

WINE MAKING PROCESS
Les Équilibristes Virevoltant is produced using a philosophy of minimal intervention and organic viticulture. The grapes are hand-harvested into crates. Fermentation is spontaneous, utilizing indigenous yeasts in small containers, with manual punch-downs for extraction. The wine is then aged in vats and amphorae, avoiding oak influence. Sulphite levels are kept low, with 25 mg/L added. The collective's approach emphasizes respect for the grape and terroir, with a commitment to sustainability and natural winemaking practices.
