It is made from 100% indigenous Vitovska grapes, cultivated using biodynamic and organic farming methods in the unique Karst region, known for its 'terra rossa' soil. The wine's production involves skin contact fermentation, a technique typically used for red wines, resulting in its distinctive character. The Cotar family's philosophy emphasizes minimal intervention and a deep connection to their terroir, with their commitment often symbolized by the fingerprints on their wine labels.

WINE MAKING PROCESS
The Vitovska Cotar 2020 is produced using the orange wine method, where 100% Vitovska grapes are fermented with their skins for seven days. Fermentation is spontaneous, utilizing indigenous yeasts in open wooden vats or barrels. Following fermentation, the wine is aged on its fine lees in oak barrels for a minimum of 24 months, often extending to three years. The winemaking process involves minimal to no added sulfur, and the wine is bottled without clarification or filtration. Sustainability is a core principle, with vineyards farmed using biodynamic and organic methods, and a focus on low yields.
