WINE MAKING PROCESS
The Viña Chocalán Vitrum Blend is produced through a meticulous winemaking process. Each component grape variety is fermented individually in stainless steel tanks, often preceded by a 10-day cold pre-fermentative maceration. Alcoholic fermentation is followed by malolactic fermentation. The wine then undergoes aging for 14 months in French oak barrels, with a proportion of new and used barrels used. Grapes are hand-picked, with harvest dates tailored to each varietal for optimal ripeness.
