WINE MAKING PROCESS
Viva Valentina Il Classico is produced from organically grown grapes in Sicily. The grapes are hand-picked and intentionally left to ripen late into autumn. Following pressing and destemming, alcoholic fermentation occurs in stainless steel tanks at controlled temperatures (26-28°C) with selected yeasts. Malolactic fermentation follows. The wine is then aged for six months in a mix of French and American oak barrels before bottling. The producer emphasizes organic practices and aims for a style that balances Italian character with international appeal.
