WINE MAKING PROCESS
The winemaking process at Von Winning emphasizes minimal intervention. Grapes are often fermented spontaneously using native yeasts. For higher-tier wines, fermentation occurs in used French oak barrels, ranging from 500 to 1500 liters. Following fermentation, the wine undergoes aging in similar oak vessels, often with extended lees contact to develop complexity and texture. Yields are naturally kept low through vine competition. The estate practices organic and sustainable viticulture, reflecting a philosophy of working in harmony with nature. Harvest for the 2023 vintage began in mid-September, with careful selection undertaken due to vintage conditions.
