WINE MAKING PROCESS
The 2022 Vouvray Clos de Rougemont is produced from hand-harvested Chenin Blanc grapes. Fermentation occurs in barrels, with a small percentage of new oak (20%) used alongside older barrels in demi-muid format. Indigenous yeasts are employed for fermentation. The wine undergoes aging in these barrels, allowing for the development of its character. The estate adheres to certified organic and biodynamic farming practices, including natural composting and working in accordance with lunar cycles.
