ABOUT THIS WINE
Domaine Vincent Carême's Vouvray Plaisir Ancestral is a sparkling white wine from the Vouvray AOC in the Loire Valley, crafted from 100% Chenin Blanc. Its name, 'Ancestral Pleasure,' refers to its production via the ancestral method, a natural sparkling wine technique where fermentation concludes in the bottle. Established in 1999 by Vincent Carême, a first-generation winemaker, the estate is a proponent of organic viticulture in the region. The vineyards are organically farmed, with vines averaging 40-45 years old, planted on limestone soils over clay and flint. The winery utilizes a historic 16th-century troglodyte cave for its vinification and aging processes.

WINE MAKING PROCESS
Domaine Vincent Carême's Vouvray Plaisir Ancestral is produced using the ancestral method (méthode ancestrale). The process begins with fermentation in tanks, which then continues in the bottle to create natural effervescence, with no added sugar or dosage. Spontaneous fermentation with wild yeasts is employed. The wine is aged for approximately 24 months, including time in large neutral oak barrels, 400L oak barrels, foudres, and amphorae. Grapes are hand-harvested from organically farmed vines. The estate emphasizes minimal intervention in its winemaking approach.
