WINE MAKING PROCESS
The winemaking process for the Neumeister Weissburgunder involves spontaneous fermentation, often in stainless steel tanks, sometimes with the use of large wooden foudres. Extended maceration times and slow maturation are employed. The wine undergoes extended lees contact in stainless steel tanks, which can last up to a year, to enhance its crystalline character and freshness. Grapes are hand-harvested from challenging, steep vineyards situated on tertiary sedimentary soils and Sarmatian gravel.
