WINE MAKING PROCESS
The Dreissigacker Weissburgunder is produced from hand-harvested and strictly selected grapes grown in organically farmed vineyards around Bechtheim. A brief one-hour maceration on skins is employed to extract fruit aromas. Fermentation is spontaneous, with 75% of the wine fermented in stainless steel tanks and 25% in wooden barrels (Stück and Tonneau). The wine is aged on full yeast for five months, followed by aging on fine yeast. Processing is conducted exclusively by gravity, avoiding the use of pumps.
