WINE MAKING PROCESS
The grapes are hand-harvested from elevated, sustainably farmed vineyards in Stellenbosch, which benefit from cooling maritime breezes off False Bay. To achieve its signature glowing golden-pink hue and delicate texture, the Pinot Gris grapes undergo exactly four days of skin contact before pressing. Fermentation occurs spontaneously using native, wild yeasts. The wine is matured for four months in old oak barrels to build texture without imparting heavy oak flavors. It is bottled unfiltered and unfined with minimal sulfur additions, preserving its natural weight and vibrant character.
