Greywacke Wild Sauvignon is a 2022 vintage white wine from Marlborough, New Zealand, made from 100% Sauvignon Blanc. Established in 2009 by Kevin Judd, a key figure in the region's wine history, Greywacke aims for wines with personality. The 'Wild Sauvignon' style is distinguished by its use of indigenous yeasts for fermentation and aging in used French oak barriques, offering a departure from more conventional Marlborough Sauvignon Blancs. The grapes are sourced from various vineyard sites across the Southern Valleys and central Wairau Plains, reflecting the diverse terroirs of Marlborough. The winery's name, Greywacke, is derived from the greywacke river stones found in the soils of the estate's original vineyard.

WINE MAKING PROCESS
The Greywacke Wild Sauvignon undergoes a distinctive winemaking process. Grapes are lightly pressed, and the resulting juice is cold-settled before being transferred to French oak barriques. Fermentation is initiated spontaneously by indigenous yeasts, with the fermentation process continuing for over six months. Approximately two-thirds of the wine undergoes malolactic fermentation. The wine is aged in French oak barriques, including a small percentage of new oak, and is occasionally stirred on its yeast lees. Before the following harvest, the wine is transferred out of oak and remains on yeast lees for an additional six months.
